I got the job!

Thank you so much for all of the supporting messages on my Calm-fidence. post. Your encouragement definitely helped, the interview with my new VP went great and I got the promotion!! Woohoo :) Such a relief! I felt like a crazy person on Monday and Tuesday because I was just waiting to hear whether or not I got this awesome new job! So happy....

To celebrate BF took me out for $25 all you can eat / drink tacos and margaritas at Nolita House, a VERY cute restaurant on Houston St. Google it, I insist.

The tacos were really good! They came 3 at a time (see below: i got so excited and ate 1 of them before remembering to take a pic!).

The margaritas were perfect, strong and not too sweet. Just how I like them! So obviously I had to have 5 of them - such a headache when I woke up this morning. Choices Caitlin, choices.

New (for me) products from Whole Foods


Honey bbq Smart Wings & Raspberry Chia Kombucha. This was my first time trying both of these products.

Kombucha - liked it. A different but refreshing taste. Lots of fiber in it. I'd totally buy this again.
After reading a bunch of stuff online, I learned that this is a pretty healthy drink. Have you ever tried Kombucha? I find it pretty pricey (almost $4/ bottle) and I’m not sure of the validity of the health benefits, but will definitely pick it up again as an occasional treat!

The smart wings on the other hand… ugh…. I brought these to work today with some frozen green beans. The sauce tasted chemically, kind of like metal and sugar mixed together. Bleck. The actual ‘wings’ were grainy tasting (I microwaved them according to the instructions on the box). Maybe if I pan seared them they would be better? I usually love soy chicken so I was surprised to toss these out half way through.

Calm-fidence.

As you may have noticed (reg readers) I have been neglecting my blog lately for a few different reasons. I feel guilty about my MIA-ness because writing this blog has been something I look forward to, get excited about and genuinely enjoy doing.

So why have i been failing at posting regularly? 2 reasons:
  1. My camera went through the washing machine over the holidays and I have been using my blackberry camera to upload pictures. I am very irresponsible with electronics.
  2. I have been very busy at work - I am in the running for a new opportunity came up and have been staying late / not sleeping because of the pressure I have been putting on myself.
My career has always been very important to me. I went to university at 17, was working at national corporations throughout school and started working at my big girl job immediately after graduating. Nothing to brag about there, but I have always held 'being successful' high on my list of personal priorities.

I work at a great company now and really love it. I am welcoming to new challenges, but sometimes I find myself lacking confidence. I found this diagram below online and can definitely relate to the "am I good enough?" and "can I do it?" feelings.

Over thinking can send anyone into a negative spiral. Right now I am trying to remain calm and maintain self confidence (and scrape up a bit more anywhere I can find it)

Restaurant Week!

This weekend I would love to take BF for a special night on the town.

Restaurant week is amazing - you can try out some of NYC's most expensive / exciting / eccentric restaurants for a flat rate.

$25 per person for lunch
$35 for dinner.

Crazy, right?

Check out the site, I'd love suggestions on where I should go this weekend.I am looking for a place that has a nice vegetarian / pescatarian option for me and something meaty for him :)

Recipe: Trader Joes frozen langostinos tails


I have been looking at Trader Joes frozen langostinos tails for quite a while. Never hearing of them before, I did a little research before deciding to buy them (they’re $9.99 for a little bag, a high ticket item at Trader Joes!), and the word langostino apparently means “prawn” according to a buddy from work. I’m glad I finally decided to get them!

I love lobster and I love shrimp – these little guys tasted like a marriage of the 2.

What you need:

½ a bag of Trader Joes frozen Langostinos
½ a tbsp of butter
A handful of fresh parsley
¼ cup of low sodium vegetable broth
1 piece of garlic, chopped
Mixed greens

  Steps!
1)      Heat up your broth & butter on the stove, add garlic. Cook it until your apartment smells like it would scare away vampires.
2)      Throw in half your parsley.
3)      Add the langostinos to the pan. Cook for about 5 minutes.
4)      Taste one. Do you like the texture? If not, cook them a bit longer.
5)      Add to a plate of mixed greens, using the leftover liquid as dressing. Top with remaining parsley.
6)      Enjoy!

This morning I tried out my new juicer!! I used spinach, parsley, a green apple, cucumber and drank it on ice. It was crazy refreshing and I can’t wait to make more. 2 complaints about juicing:

Why do you only get a little bit of juice for a whole lot of produce?
I feel like I’m wasting the pulp!! Are there any uses for this?

My potential new best friend

Look what arrived yesterday!

 After trying out my very first juice cleanse last week and watching Fat, Sick and Nearly Dead I decided that I needed a juicer. I want to be able to make my own juice cleanses at home, saving myself the upwards of $200 for some branded cleanses. (like Blueprint, Cooler Cleanse, Organic Avenue etc)

I haven’t quite decided my approach yet, but so far I’m thinking juice for breakfast & the occasional dinner sounds doable. Any recommendations?

Tonight I might try out a green juice tonight! Can you recommend any combos?

4 Day Juice Cleanse Wrap Up


 Last week I did a 4 day cleanse using Simplifast’s Juice Diet Shots.

Initially, I had agreed to do a cleanse with a couple girls from the office. I had a hard time believing that I could actually stick to it – I was really scared that I would fall off the wagon half way through! By the end of the cleanse, I felt like I could keep going because I wasn’t hungry and I genuinely felt better overall.

My best advice to you if you’re considering doing a cleanse: Easing off of a cleanse is important. The night I finished the cleanse, I had a piece of pizza and a few drinks. I got so sick, never ever do that! The day after the cleanse, I started the day with a juice (I actually woke up craving one!), then later had some fruit, veggies and soup. I found that I got full really quickly.

Even 3 days after I finished the cleanse, I notice my appetite isn’t as out of control as it was after the holidays. I have lost a few pounds and I hope they stay off. This week I am planning to stick to a plant based diet with the occasional protein thrown in there. For example, this morning I had  2 kiwis for breakfast, a big salad for lunch with tofu and some cherry tomatoes & cucumber slices for an afternoon snack. I’d also like to only have 1 cup of coffee today as I found I didn’t need it like I thought I did – I just missed the taste & experience of a good cup of coffee.
